I just want to go to bed!
It’s been a rough week; everyone in the house got the cold that’s been going around. My husband was traveling, and I had to work every day. That’s what happens, nothing stops, and you just have to find a way to slow it down to a speed you can keep up with. You do what you have to and cut out what you can do without. Something always has to give, otherwise if you push too hard you end up down for the count and then nothing gets done.
So at the end of each day, which came earlier than normal this week, there were things that just didn’t get done so I could get to bed and get enough rest to make it through the next day. Then on Friday night I gave myself the night off, no one had anywhere they had to be and so I took that time to catch up on anything I missed on TV. My daughter wanted to go out so she had to find someone else to drive her, and I spent some much needed time on the couch.
Then on Saturday it was back to business as usual. My weekends are jam packed with driving, errands, activities, and parties, all the normal craziness of the week. I’m so glad I took the time to rest when I had it because I never would have been able to make it through my regular weekend schedule otherwise.
So take good care of yourself so you can do all the things you want and need to do.

Well the weather is changing and it’s making me crave a good hot meal again. I always eat lighter when it’s warm, but now it’s time for some heaver, starchier foods. I do try my best to eat healthy and nutritious foods, so here is what I came up with last night. It’s simple, healthy, easy and fast.
Gluten free Pasta with Fresh Veggies
1 lb pasta whatever you like (I used gluten free linguine)
1 cup baby spinach
¼ cup broccoli
¼ cup cauliflower
½ cup zucchini
Cook pasta according to box directions
With 5 min remaining throw in all the veggies except the spinach
When pasta is cooked remove from heat and throw in the spinach and stir
Drain and rinse with cold water
Top with your favorite sauce or sautéed diced tomatoes
• As an alternative you can sauté all the vegetables with diced tomatoes and use that to top your pasta.
• Either way it still quick easy an delicious.
